To make the curry dressing you simply add all the ingredients to a bowl and whisk it well together, the amount of curry needed really depends on the curry you use and how strong you like it, so add a little at a time until you have the right flavor. When the bacon is done you can add it to a bowl along with the rest of the salad ingredients except for the cashews and sunflower seeds. Mix in the dressing and make sure everything is well coated. Let it sit in the fridge for at least an hour before serving – I really recommend doing this as it makes a big difference for the flavor, sometimes I make a big portion and serve half for dinner right away and save the rest for lunch next day and the portion that have been sitting in the fridge is always so much more flavorful!
